SUYL-Easy Cheesy Frittata

I stumbled across this recipe about a year ago. I cook breakfast every Saturday and Sunday morning. My husband wanted plain ole sausage, eggs, bacon and grits and I was over the "traditional" breakfast so I went to googling for new ideas and stumbled across this little beauty. It's so delicious and super easy to make. 

Easy Cheesy Frittata:

4 whole eggs
4 egg whites
2 tbs water
1 cup mozzarella cheese
1/2 cup chopped seeded tomatoes (I leave these out...)
2 slices bacon, cooked until crispy then crumbled
1/4 cup chopped fresh basil

Heat oven the 350. Beat eggs, egg whites and water with a whisk in a bowl until well blended. Stir in 1/2 cup cheese, tomatoes, bacon and basil. Pour mixture in a greased 9-inch pie plate. 
Bake for 25 minutes or until puffed and golden brown. Sprinkle with remaining cheese and bake for 5 more minutes or until cheese is melted. 

You could also make mini-frittata's. Prepare as directed above but pour mixture into a greased muffin tin. Bake for 20 minutes, sprinkle with cheese and bake for another 3-5 minutes.
